Hyssopus officinalis or hyssop is a herbaceous plant of the genus Hyssopus native to Southern Europe, the Middle East, and the region surrounding the Caspian Sea. The stem is woody at the base, from which grow a number of straight branches.
Its leaves are lanceshaped, dark green in colour. During the summer, the plant produces bunches of pink, blue, or, more rarely, white fragrant flowers. Flower clusters are 3-7-flowered, forming spike-like inflorescence.

Caring for Hyssopus officinalis
- Easily grown in average, dry to medium moisture, well-drained soils in full sun to part shade. Generally appreciates some afternoon part shade in hot summer climates. Thrives with regular watering, but established plants have drought tolerance. Prune back foliage in early to mid-spring. May be grown from seed sown in early spring.
Typical uses of Hyssopus officinalis
Special features: Herb garden, rock garden or border. Specimen or group. Clip for low hedge or edger. Containers. Leaves and flowers may be harvested for use in cooking or dried for use in potpourris.
Culinary use: The fresh herb is commonly used in cooking. Essence of hyssop can be obtained by steaming, and is used in cooking to a lesser extent.
Ornamental use: Hyssop is an aromatic, semi-evergreen, woody-based, shrubby perennial that grows in an erect bushy clump. It is frequently grown in herb gardens and as an ornamental.
Medicinal use: Due to its properties as an antiseptic, cough reliever, and expectorant, it is commonly used as a medicinal plant.
