White or pink flowers occur in vertical upright clusters, which prominently appear above the foliage. Each pod contains many seeds covered with a thin waxy blood-red aril. When fully mature, the pod dries, hardens, and splits open, exposing the seeds. The color of the seed coating is due mainly to the carotenoid pigments bixin and norbixin.

Planting and care
Growing plants can be inexpensive, particularly when growing them from seed. Caring for Annatto
- It prefers year-round moisture, good drainage, and moderately fertile soil in full sun or partial shade.
- Make sure and mulch with at least six inches deep in order to protect the roots from cold weather.

Special features: It is also grown in other tropical or subtropical regions of the world, including Central America, Africa and Asia. The heart-shaped fruit are brown or reddish brown at maturity, and are covered with short, stiff hairs.
