Description for Satureja spp.

Satureja is a genus of aromatic plants of the family Lamiaceae, related to rosemary and thyme. It is native to North Africa, southern and southeastern Europe, the Middle East, and Central Asia.

Planting and care

Sumer and winter savory can be grown in containers. Grow winter savory as an annual. Choose a container at least 6 inches deep and wide. Over-winter container grown winter savory in an unheated garage or patio.

Caring for Satureja spp.

    Summer savory grows so quickly that it can become top heavy and may require staking. Winter savory is a perennial; it should be cut back to a few inches tall each spring and replanted every 4 to 5 years. Winter savory is hardy to about 10°F (-10°C).

Typical uses of Satureja spp.

Special features: Savory is known as the "bean herb" because it both enhances the flavor of beans and also helps in their digestion, thus decreasing the flatulence often associated with these and other legumes.

Culinary use: Both summer savory (Satureja hortensis) and winter savory (Satureja montana) are used to flavor food.
Savory plays an important part in Georgian, Bulgarian and Italian cuisine, particularly when cooking beans.

Ornamental use: The plant is used for ornamental purpose
