Dried or fresh, raw or cooked, onions are an indispensable ingredient in a variety of soups, salads, breads, and casseroles. Onions are easier to grow than you might think, and they're a great plant for tucking into spare corners and along the edges of garden beds.

  • Lifecycle: annual
  • Ease-of-care: moderately difficult. Easy if you have rich well-drained soil and good weed control.
  • Height: 1 to 3 feet
  • Spread: 0.5 to 1 feet
  • Bloom time: mid-summer

Whether harvested early for scallions (green onions), for summer meals, or winter storage, onions need rich, well-drained soil and good weed control. Tightly spaced green onions fit well in ornamental plantings.

Onions come in a wide variety of shapes, sizes, and colors. The white, yellow, or red bulbs range in size from small pickling onions to large Spanish cultivars; they can be globe, top, or spindle shaped.

Growing Information

Soil conditions: requires well-drained soil, requires high fertility. Well-drained, rich soil, high in organic matter, neutral pH. Optimum pH is 6.2 to 6.8. Requires plentiful, even moisture for good yields.

Germination temperature: 45 F to 95 F

Days to emergence: 4 to 5

Seed can be saved 1 year. - Longer if stored properly in cool, dry location.


  • Select a location with full sun where your onions won't be shaded by other plants.
  • Soil needs to be well-drained, loose, and rich in nitrogen; compact soil affects bulb development.
  • Till in aged manure or fertilizer the fall before planting. Onions are heavy feeders and need constant nourishment to produce big bulbs.
  • At planting time, you can mix in some nitogen fertilizer, too, and side dress every few weeks until the bulbing process begins.
  • Seeding? Onion seeds are short-lived. If planting seeds indoors, start with fresh seeds each year. Start seeds indoors about 6 weeks before transplanting.
  • Plant onions as soon as the ground can be worked in the spring, usually late March or April. Make sure temperature doesn’t go below 20 degrees F.
  • For sets or transplants, plant the smaller sets 1 inch deep, with 4 to 5 inches between each plant and in rows 12 to 18 inches apart.
  • Think of onions as a leaf crop, not a root crop. When planting onion sets, don’t bury them more than one inch under the soil; if more than the bottom third of the bulb is underground, bulb growth can be restricted.
  • Practice crop rotation with onions.


  • Fertilize every few weeks with nitrogen to get big bulbs. Cease fertilizing when the onions push the soil away and the bulbing process has started. Do not put the soil back around the onions; the bulb needs to emerge above the soil.
  • Generally, onions do not need consistent watering if mulch is used. About one inch of water per week (including rain water) is sufficient. If you want sweeter onions, water more.
  • Onions will look healthy even if they are bone dry, be sure to water during drought conditions.
  • Make sure soil is well-drained. Mulch will help retain moisture and stifle weeds.
  • Cut or pull any onions that send up flower stalks; this means that the onions have "bolted" and are done.


  • When onions start to mature, the tops become yellow and begin to fall over. At that point, bend the tops down or even stomp on them to speed the final ripening process.
  • Loosen the soil to encourage drying, and after a few days turn them up and let them cure on dry ground. Always handle them very carefully—the slightest bruise will encourage rot to set in.
  • When tops are brown, pull the onions.
  • Be sure to harvest in late summer, before cool weather. Mature onions may spoil in fall weather.
  • Allow onions to dry for several weeks before you store them in a root cellar or any other storage area. Spread them out on an open screen off the ground to dry.
  • Store at 40 to 50 degrees F (4 to 10 degrees C) in braids or with the stems broken off.
  • Mature, dry-skinned bulbs like it cool and dry, so don't store them with apples or potatoes.

  • They are very versatile and can be baked, boiled, braised, grilled, fried, roasted, sautéed or eaten raw in salads.
  • Their layered nature makes them easy to hollow out once cooked, facilitating stuffing them. 
  • Onions are a staple in Indian cuisine, often used as a thickening agent for curries and gravies. Onions pickled in vinegar are eaten as a snack. 

Health Benefits of Onions

Good Oral Health: Onions are often used to prevent tooth decay and oral infections. Chewing raw onions for 2 to 3 minutes can potentially kill all the germs present in the oral area and surrounding places like the throat and lips.

Immune System Strength: The phytochemicals that are present in significant amounts in onions act as a stimulant to vitamin C within the body. The efficacy of vitamin C, and subsequently your immune system, is boosted when you eat onions, since it supercharges your immune system against toxins and various foreign bodies that can lead to disease and illness.

Chromium helps the body manage blood sugar levels and ensure a slow, gradual release of glucose to the muscles and the body cells. Therefore, eating onions can help modulate your blood sugar levels, which is vitally important for diabetic patients.

Glowing Skin: Onion juice mixed with honey or olive oil is said to be best treatment for treating symptoms or signs of acne. Onions are also notorious anti-inflammatory vegetables, so the active compounds in onions can reduce the redness and swelling that is commonly associated with skin conditions like acne. It also helps to reduce the associated pain and inflammation of conditions like gout and arthritis.

Vitamin C is also a strong antioxidant, which can reduce the presence and impact of free radicals throughout the body. 

Relieving Earache: A few drops of onion juice may actually prove immensely beneficial to individuals suffering from acute earache. The ringing sound in the ear may be cured by applying onion juice through a piece of cotton wool.
